Are you prepared for hurricane season? I like to buy something special for my hurricane kit - some fancy cookies I'd never normally buy for example. Being out of power and running water is bad enough - at least be prepared to have something to eat that you know you'll like. Let's just say we found out the hard way we don't like southwestern corn chowder.

I wrote down the recipe for Chipotle Cashew chicken. Did you substitute some of those ingredients? It looks like so many ingredients.

Nope I used all the ingredients, but I have at least half of all that stuff on hand for other reasons anyway. I used pancake syrup instead of Maple Syrup. I didn't use raw cashews, I used "lightly salted halves and pieces" it was still really good.

You could plan other meals around the ingredients you have to buy extra - like have frozen peas as a side another night. Red bell pepper is really expensive right now ($4 a pound) use green or just skip it. It will still be good.
