Tastes Like Chicken: Apple 'n' Onion Chicken

Rob is pretty honest about what he likes and doesn't like when it comes to my cooking. We had this the other night and he pronounced it GOOD!

Apple 'n' Onion Chicken

3 medium apples, sliced
2 large onions, thinly sliced
1 tablespoon butter
6 boneless skinless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup shredded Swiss cheese
1/4 cup grated Parmesan cheese
1/4 cup seasoned bread crumbs
1/2 teaspoon thyme
2 tablespoons unsweetened apple juice

Saute the apples and onions in butter until tender. Meanwhile... Combine the swiss, parm, bread crumbs, and thyme in a bowl. Then pour the apples 'n' onions into a greased baking dish and top with chicken. Season with salt & pepper. Top with cheese mixture and drizzle on the apple juice. Bake at 350 for 30-35 minutes.

Sounds good... I'll have to try that next. Tonight it is chicken tortilla soup from Rachel Ray. Did you buy fresh thyme for this recipe?? ha!

No way! I almost never buy fresh herbs because (when I have in the past) it always seems like I use 1/28th of the bunch and the rest goes to waste.

hey... I tried this the other night. I think the verdict from our house was that it was just ok. :)

I guess the swiss cheese/apple combo might be a little odd. Rob really likes Swiss and I thought it had a unique taste. I liked it.
