We had the SRC Casserole tonight - it was yummy, much spicier than I expected. I actually halved it and used one can of rotel tomatoes rather than one rotel and one plain diced.

how do you know when to cut a recipe in half? by the number of people it serves?

Well in the case of the Spanish Rice casserole, I halved it because I realized it called for 2 boxes of spanish rice and I only bought 1 :) But most of the recipes I make have a number of servings listed. I half things all the time. When I buy muffin mix, I shake the bag so it settles to the bottom, then draw a line with a marker half-way down and only use half of it and half of the other ingredients (I half an egg by cracking it, beating it and only using half - about 2 tbsp).

Oh and we had the Meat Loaf Wellington tonight - it was delicious :)

I'm going to try the Meat Loaf Wellington and the Spanish chicken rice casserole this week. I'll let you know how they go.

I made the meatloaf wellington last night. I thought it was a nice change of pace, but maybe a little more spicy would be even better in my opinion. My mother-in-law loved it.

That's what I thought about it - meatloaf with a twist. Rob wasn't crazy about it, he likes old school meatloaf ;)
